Whatever is a skin-contact (orange-style) dry white wine from Hakko Chaud (formerly Domaine Chaud), made from 100% Kerner grapes grown in Yoichi, Hokkaido — sourced outside the producer's home base of Niigata. The 2024 vintage is fermented with indigenous wild yeasts, bottled unfiltered and with no added sulfites (SO2-free), and shows the fine natural spritz typical of this hands-off approach. Fruit is farmed by hand without herbicides. The result is a wine with soft, textured fruit and a gentle bitterness on the finish that plays beautifully with umami-rich food.
