Cuvee Shinden is Grape Republic's flagship orange wine, made entirely from grapes grown in the Shinden district of Nanyo City, Yamagata — the vineyard area for which the wine is named. A blend of Delaware, Niagara, and Neo Muscat, it is fermented in amphorae with indigenous wild yeast, using both whole-cluster and destemmed lots for layered skin contact, then aged for roughly nine months on the skins. Bottled unfined, unfiltered, and without added sulfites, it shows a bittersweet orange-peel character balanced by smooth, fine tannins and a savory, umami-rich finish.

100% grapes from Shinden, Nanyo City — organically farmed with no chemical fertilizer and minimal spraying (Bordeaux mixture only). Delaware, Niagara, and Neo Muscat are fermented separately in two amphorae with wild yeast — one lot whole-cluster, another destemmed — for extended skin contact, then aged roughly nine months in amphora. No fining, no filtration, no added sulfites. ABV 12.5%.
