Bianco Macerato is Grape Republic's orange wine, blending Delaware (50%), Niagara (32%), Rosario Bianco (12%), and Neo Muscat (6%) grown in Nanyo City, Yamagata. The must undergoes roughly one week of skin-contact fermentation (maceration) across resin tanks and amphorae, with about 15% whole-cluster fermentation; the wine is then aged 60% in amphorae and 40% in stainless steel. Unfined, unfiltered, and made without additives, it shows a bright golden hue with fresh fruit, herbal and spice nuances, and citrus notes reminiscent of hassaku orange, framed by skin-derived bitterness and a dry finish.

Sommelier's Note

Proof that Japanese hybrid grapes can carry serious skin-contact winemaking — vivid, citrus-driven, and precisely textured.

New to wine?

A friendly first orange wine — citrusy and textured, with a gentle bitterness that's easy to enjoy rather than challenging.

Food Pairings

The skin-contact texture and citrus bitterness pair well with grilled fish, tempura, and dishes seasoned with miso or soy, as well as fermented vegetables and aged hard cheeses.

When to drink it

Great for casual dinners with Japanese food, izakaya-style spreads, or as a conversation-starting orange wine for guests new to the category.
