Midori ("Green") is a dry-style white wine from Gokase Winery, made from 100% Niagara grapes grown by local farmers in Gokase, Miyazaki Prefecture, at roughly 600-660 meters in the Kyushu mountains. Niagara is normally vinified into Gokase Winery's fruity, sweet signature white, but Midori takes the same grape in the opposite direction: it is fermented dry to give a crisper, cleaner finish that widens the range of dishes it can pair with, while still carrying Niagara's distinctive grapey aroma. It was awarded a Silver Medal in the North American-variety white wine category at the Japan Wine Competition 2024. Bottled at 720ml, ABV 11%.
Midori is proof that grape stereotypes only go so far: the very same Niagara that gives Gokase Winery its sweet, aromatic signature wine becomes a crisp, food-friendly dry white here, purely through winemaking choice — a small but telling example of what this cool, high-altitude Kyushu vineyard can do.
