For this bottling, the grapes were sourced from Nagano Prefecture, and the wine was crafted under the guidance of Go Shiose of Le Milieu, the Azumino-based natural winery that also trained Funakoshi's own winemaker, Natsumi Tobari. Goodness is Funakoshi Winery's lightly sparkling (pétillant) rosé, made from Muscat Bailey A grapes sourced from Hitachiota, Ibaraki Prefecture. The grapes are destemmed, crushed, and given a three-day cold maceration in stainless steel before pressing; the wine then undergoes a secondary in-bottle fermentation, unfiltered and left on its fine lees, with only 30 ppm of sulfites added at the start of fermentation and none at bottling. The result is a slightly hazy, vivid ruby-colored wine with delicate micro-bubbles — fresh strawberry aromas open up after time in the glass, contrasted by a surprisingly dry, crisp palate at 12% ABV.
