Koshu Nigori - Third Harvest is the closing release in Chateau Sakaori Winery's three-part, harvest-lot Koshu nigori series, bottled from 100% Yamanashi Koshu grapes drawn primarily from the Hosaka district (Kofu City). Released November 21, 2025 — about two and three weeks after the winery's First Harvest (Kofu/Fuefuki and Minami-Alps grapes, Nov 3) and Second Harvest (Minami-Alps grapes, Nov 14) bottlings — it is left unfiltered with its fine lees, giving the wine its characteristic cloudy appearance. Where the First Harvest leans into rich sweetness with a gentle bitterness and the Second Harvest shows a fuller, more aromatic body, the Third Harvest is defined by crisp, refreshing acidity and a clean fruit character, with a well-balanced interplay of sweetness and acidity. All three lots share the same 750ml format, 10% ABV, and ¥1,980 (tax included) price point.

Sommelier's Note

Of the three harvest-lot Koshu Nigori releases, the Third Harvest is the one for drinkers who want acidity over sweetness — it's the crispest, cleanest expression in the series and the best match for oily or fried dishes.

New to wine?

A refreshing, easy-drinking introduction to Koshu nigori — its crisp acidity makes it feel lighter and cleaner than its two siblings in the harvest series.

Food Pairings

The crisp acidity and clean fruit character pair especially well with delicate Japanese dishes such as sashimi, salt-grilled fish, and cold tofu (hiyayakko), as well as tempura where the wine's brightness cuts through the oil.

When to drink it

Ideal for closing out the autumn new-release Koshu season, casual dinners with Japanese food, or comparing side-by-side with the First and Second Harvest bottlings.
