About this wine

The Riserva bottling from Ca' Viola's Sottocastello di Novello cru, made only in the best vintages from Nebbiolo vines around 15 years old on soils of clayey-silty grey-whitish marl and yellowish sandstone. Fermentation takes place in thermo-controlled cement tanks with indigenous yeasts for 15-20 days, followed by 25-30 days of submerged-cap maceration, then aging in large oak casks for 36 months plus 24 months in bottle before release. Garnet red, with cherry, raspberry, violet, dog rose, spice and licorice aromas; powerful and elegant on the palate, structured yet velvety, with a long, harmonious finish.
