Ca' Viola's Barolo, first produced from the 2005 vintage, sourced from a 1.89-hectare Nebbiolo vineyard at the foot of Novello's neo-Gothic castle, south-facing at over 470m altitude — a site combining Barolo's elegance with the power of neighboring Monforte. Fermented in thermo-controlled cement tanks with indigenous yeasts, aged in large oak. A captivating bouquet of cherry and raspberry, violet and rose, with earthy truffle and forest-floor notes; the palate is concentrated, with plum and macerated raspberry giving way to darker earth tones, fine tannins and vibrant acidity.
