100% Merlot from the Tsugane vineyard at approximately 800m elevation in Hokuto City, Yamanashi Prefecture. Hand-harvested and hand-destemmed. Basket-pressed. Natural fermentation with indigenous yeasts; no temperature control. Minimal or no sulfur addition. Aged in oak barrels. Gravity bottling; unfined and unfiltered. Production varies between 200 and 1,967 bottles per vintage.
