Natural winery in Tsugane, Hokuto City, Yamanashi Prefecture, founded by Eishi Okamoto in 1999. A pioneer of minimal-intervention winemaking in Japan, producing under 10,000 bottles per year of highly sought-after wines from Merlot, Cabernet Franc, Pinot Noir, Chardonnay and other varieties. All work is done by hand, with natural fermentation, no temperature control, no filtration, and gravity bottling.
