Polychrome Flower is a single-varietal Kyoho red from Aperture Farm and Winery's "Polychrome" range, a lineup winemaker Ryo Tanabe launched in 2022 alongside sibling cuvées such as Cent, Soil, Woods and Camellia. Named for the idea of "many colors," the Polychrome series lets Tanabe experiment with blending, technique and a mix of estate-grown and purchased fruit; the 2024 Flower spotlights Kyoho, a grape far better known in Japan as a table grape than a wine grape, vinified in a Gamay-inspired style with extended whole-bunch maceration and gentle punch-downs to build structure around its naturally soft tannin. Fermented spontaneously with indigenous yeast and bottled without added sulfites, it carries the winery's usual low-intervention, honest approach and is released in tiny volumes that sell out quickly.

Vinified with extended whole-bunch maceration and repeated gentle punch-downs — a technique the winery uses on its Kyoho-based reds to manage the variety's naturally soft tannin and build structure in a carbonic-maceration, Gamay-like style. Fermented with indigenous wild yeast and bottled with no added sulfites; requires refrigerated storage.
