Do Not Compare is a limited-run second cuvée drawn from the same 2022 Merlot lots as Aperture Farm and Winery's Ignore Them. It already shows developed, animal-like nuances and notes of tanned leather, layered over a wild, savory character. True to its conceptual name, it asks to be tasted entirely on its own terms rather than measured against any other wine in the lineup.

Sommelier's Note

A rustic, leather-and-game expression of Merlot from a micro-winery pushing wild-yeast, low-intervention winemaking to its honest limits.

New to wine?

A wilder, more savory style of Merlot — approach it without expecting a typical fruit-forward red.

Food Pairings

The animalic, leathery profile pairs well with game birds, slow-braised beef, and aged hard cheeses that can stand up to its wild character.

When to drink it

Best suited to an intimate dinner with dishes rich enough to match its wild character.

Terroir & Winemaking

Merlot from ~1.7 hectares at 600-800m elevation in Nezu, Tomi City (Chikuma River Wine Valley), Nagano. Near-organic farming relying solely on Bordeaux mixture, with no chemical fertilizers, pesticides or insecticides. Fermented with indigenous wild yeast and bottled with minimal sulfite additions as a secondary selection alongside the producer's Ignore Them cuvée.
