Assemblage is a 2023-vintage dry rosé that Aperture Farm and Winery produced as the commemorative cuvée for Tomi Wine Festa 2024 ("~Assemblage~"), Tomi City's 10th outdoor wine festival. It is a one-off collaborative blend: 19 grape growers across Tomi City, Nagano contributed 17 grape varieties in total, led by Chardonnay (36%), Kyoho (20%) and Sauvignon Blanc (10%), with smaller shares of Pinot Noir, Pinot Gris, Aligoté and Sangiovese, plus ten further varieties — Kai Noir, Shine Muscat, Roussanne, Petit Manseng, Merlot, Riesling, Viognier, Gewürztraminer, Chenin Blanc and Sémillon — making up the remaining 14%. Winemaker Ryo Tanabe sorted the fruit into three groups by character (aromatic grapes, grapes suited to carbonic maceration, and neutral-press grapes), fermented each group separately, then pressed and co-fermented them together. The wine aged six months in used oak barrels, was fermented with indigenous wild yeast, bottled without added sulfites, and left unfiltered, at 10% ABV. Only 200 bottles were made, priced at ¥4,000 and sold exclusively at the festival (Tomi, May 11-12, 2024); organizers described it as fine enough to have carried the winery's flagship 'Black and White' label.
