Non-Portrait is a signature casual-line red from Aperture Farm and Winery in Tomi City, Nagano, made primarily from Kyoho — a grape usually treated as a table variety. Winemaker Ryo Tanabe, a former photography student, blends two separately vinified Kyoho lots (one fermented as whole clusters via carbonic maceration, the other destemmed and crushed) together with an undisclosed additional element, deliberately breaking the idea of a single, fixed 'portrait' of what Kyoho wine should taste like — hence the name. Fermented with wild yeast, bottled without added sulfites, and aged around 11 months in barrel, it has been produced each vintage since 2021.
This wine refuses to paint a single 'portrait' of Kyoho — by blending two different vinification methods plus a secret element, it turns a everyday table grape into something genuinely thought-provoking.
