Rita Farm & Winery was founded in 2013 by Yuriko Sugawara, a Yoichi native who transformed from wine importer to natural winemaker after a single glass of French natural Chardonnay sparkling changed her life. Together with her husband, she converted a former apple orchard in Yoichi's Nobori district into the 'Wind Vineyard' — a 3-hectare south-facing plot at 40m elevation with volcanic ash silt soils. Sea breezes keep the vines healthy without pesticides, allowing Chardonnay, Sauvignon Blanc, Pinot Noir, and Merlot to ripen naturally. All wines are made with wild yeast fermentation, gravity-flow transfers, and coarse filtration only — Sugawara's vision of wine that 'absorbs into the body like water into skin.' Production is around 35,000 bottles annually.

Rue de Vin is a pioneering estate winery in Tomi City, Nagano Prefecture, founded by Hideaki Koyama in 2008. Koyama, a former electronics engineer, relocated to Tomi to reclaim abandoned apple orchards and transformed roughly 5.5 hectares of overgrown land into thriving vineyards. Starting with commissioned winemaking at Villadest Winery in 2007, the estate opened its own cellar in 2010. The name — French for "wine street" — embodies the vision of a wine-centred lifestyle radiating from a single street in Tomi to the wider community. Grape varieties include Chardonnay, Sauvignon Blanc, Merlot, Cabernet Sauvignon, Pinot Noir, Gewürztraminer, Pinot Gris, Cabernet Franc, and Gamay, all grown on cool-climate slopes with large diurnal temperature swings alongside the Chikumagawa (Chikuma River). Wines are made with minimal SO₂, no fining, and no filtration, letting the vintage express itself naturally. The estate also hosts a café-restaurant and a weekend chambre d'hôte guesthouse (opened 2020). A recipient of the Japan Winery Award (JWA 2025).

Founded in 1892 in the hot-spring town of Akayu, Nanyo City, Yamagata Prefecture, Sakai Winery is the oldest winery in the Tohoku region of Japan. Established by Yasou Sakai, the 16th-generation head of the Sakai family, on a steep hillside called Toriagezaka ('the slope of the soaring birds'), the winery has produced wine in the same location for over 130 years. In 2004, fifth-generation winemaker Ippei Sakai — a graduate of Tokyo University of Agriculture's Department of Brewing — took over and led a transformational return to the winery's founding-era methods: wild-yeast fermentation, no filtration (the winery has never owned a filtration machine), no fining, and minimal sulfur. All wines are released under the 'BIRDUP' brand with each cuvée named after wild birds (shijukara/great tit, jobitaki/Daurian redstart, aogera/Japanese green woodpecker) that inhabit the vineyards and surrounding Akayu countryside.
