Kimura Farm is a pioneering grape-growing estate in the Nobori district of Yoichi, Hokkaido, managed by Koji Kimura. The family has cultivated fruit trees since the grandfather's generation; in 1984 they planted Kerner, and in 1985 they planted Pinot Noir — making Kimura Farm home to what is widely considered the oldest substantial Pinot Noir vineyard in Hokkaido, if not in all of Japan. The 8.5-hectare estate is planted mainly to Pinot Noir (5 ha), with the remainder in Kerner, Chardonnay, Pinot Gris, and Pinot Meunier. The vineyard sits on gently undulating slopes facing the Sea of Japan, with well-draining sandy-clay soils. Kimura Farm supplies grapes to several leading Hokkaido wineries; their Pinot Noir is most famously vinified by Bruce Gutlove of 10R Winery under the KWtN ('Kamihoro Wine to Nakama-tachi') label.

Kisvin Winery was founded in 2013 in Enzan, Koshu City, Yamanashi Prefecture, by a partnership of two specialists: third-generation viticulturist Yasuhiro Ogihara and internationally-trained winemaker Mayu Saito. The name 'Kisvin' is a coined term meaning 'Kiss the Grapes.' Saito studied winemaking at California State University, Fresno, and trained at Domaine Jean Collet in Chablis, Burgundy, before joining the winery. The duo cultivates approximately 5 hectares of vineyards, growing Koshu and Chardonnay for whites, Pinot Noir and Syrah for reds, and Zinfandel for rosé. Their most innovative technique involves hand-covering each grape bunch with specially designed silver umbrellas to shield them from direct sunlight and morning dew—allowing Koshu grapes to ripen while retaining green color and freshness. In 2017, world-renowned sommelier Gérard Basset (holder of five Master of Wine titles) visited Kisvin and publicly praised their Chardonnay and Pinot Noir. In 2019, Kisvin Koshu was selected for ANA international first-class service. Saito was featured on NHK's 'Professional: A Work of Passion' (2021). In 2025, Kisvin received the prestigious 5-star rating at the Japan Winery Award (JWA), the highest honor given to wineries producing wines of outstanding quality across many varieties and vintages.

Kitani Wine is Nara Prefecture's first and only winery, founded in 2022 by Kazuto Kitani (木谷一登) in Kashiba City, Nara. Kazuto was born and raised in Nara and pursued an unconventional path to winemaking: after earning a postgraduate degree from Kyoto University researching diabetes prevention, he worked as a banker, where visits to Katashimo Winery—one of his bank's clients—ignited a passion for viticulture and winemaking. In 2016, he left the financial world to undergo rigorous training at Katashimo Winery in Osaka, and in January 2018 he struck out on his own as an independent grape grower. In September 2022, he obtained his winemaking license and officially became Nara's first winemaker. Kitani cultivates approximately 1.5–3 hectares of vineyards spread across Nara and Osaka, growing around 15–20 grape varieties. Key plots include a main field in Tenri City, Nara, and parcels in Habikino, Taishi, and Kashiwara in Osaka Prefecture. Varieties grown include Delaware, Koshu, Merlot, Pinot Noir, Sauvignon Blanc, Pinot Gris, Mondobrill (Mondebrière), Vignoles, Kyoho, Pione, Black Beat, Golby, Shine Muscat, and Zweigelt, among others. Farming is fully organic: no herbicides, no chemical fertilizers, with only minimal Bordeaux mixture and lime-sulfur used when absolutely necessary. Cover cropping (草生栽培) is practiced throughout the vineyards. In the cellar, Kitani's philosophy is strict minimalism—no cultured yeast, no added sulfites, no chaptalization, and no filtration. All wines are made with spontaneous indigenous fermentation, allowing the character of each vintage and terroir to speak clearly. Kitani Wine received the JAL Prize (JAL賞) at the Japan Winery Award (JWA) 2025, recognizing it as an outstanding next-generation winery with exceptional promise for the future of Japanese wine. This award, presented alongside Japan Airlines, is bestowed on wineries seen as torchbearers for the next era of domestic wine. Among Kitani's signature ambitions is producing a world-class sparkling wine from Delaware—a variety long underestimated in Japan—elevating it to the prestige of a "Dom Pérignon from Delaware."

Kizan Winery is a small, third-generation family-run winery founded in 1930 in Koshu City (Enzan/Shioyama district), Yamanashi Prefecture. The name Kizan derives from the posthumous Buddhist name of warlord Takeda Shingen, whose family temple Erinji stands nearby. Third-generation winemaker Kozo Tsuchiya holds a PhD in microbiology from Tokyo University and began winemaking in 1994; his wife Yukari, also an oenologist, studied at the University of Adelaide (Roseworthy). Together they handle cultivation, vinification, and sales almost entirely by themselves. The winery works with approximately 1.1 hectares of estate vineyards plus contracted growers exclusively in the Higashi-Yamanashi district, focusing on the indigenous Koshu grape for its sparkling and still whites, and Black Queen for its red. Their hallmark is the Kizan Sparkling Traditional Brut, a methode traditionnelle Koshu sparkling aged 12 months on lees, produced at an exceptional price point. The winery received five consecutive five-star ratings from the Japan Winery Award (2019-2023) and again in 2025. Their guiding philosophy: craft honest wines that belong on the everyday Japanese dining table.

Kondo Vineyard is a family-owned grape farm and winery in the Sorachi subprefecture of Hokkaido, Japan, operated by brothers Ryosuke Kondo (近藤良介) and Takumi Kondo (近藤拓身). Ryosuke established the first Tap-Kop farm in Mikasa in 2007, followed by the Moseushi farm in Iwamizawa's Kurisawa district in 2011. For five years (2012–2016) grapes were vinified under contract at the pioneering 10R Winery in Kurisawa. In 2017, together with neighboring Nakazawa Vineyard (the Nakazawa family) and Takumi, they co-founded Kurisawa Wines (栗澤ワインズ) — their own winery — marking the start of fully independent production. Kurisawa Wines (栗澤ワインズ) is a joint winery in the Kurisawa district of Iwamizawa, Hokkaido, co-founded in 2017 by two neighbouring farming families: Kazuyuki and Yukiko Nakazawa of Nakazawa Vineyard, and brothers Ryosuke and Takumi Kondo of KONDO Vineyard. Before founding the winery, both families had independently vinified their grapes — first at Coco Farm Winery in Tochigi (Nakazawa, 2002–2012), then at 10R Winery in the same Kurisawa township (Nakazawa from 2013; Kondo from 2012–2016) — giving Kurisawa Wines the benefit of over a decade of viticultural experience before its first harvest under its own roof. The shared facility enables each grower to produce wines under their own vineyard label as well as collaborative bottlings. The philosophy across all labels is minimal-intervention: indigenous yeast fermentation, no fining or filtration, and little or no added sulphites. KONDO Vineyard additionally employs horse-drawn cultivation and ancient Georgian qvevri (clay vessels buried underground) for fermentation and ageing. L'Aurage (Domaine de L'Aurage) is a family estate in Castillon-Côtes de Bordeaux run by Louis 'Loulou' Mitjavile and his sister Caroline — the children of François Mitjavile, the legendary creator of Château Tertre Roteboeuf in Saint-Émilion. Launched in 2007 (debut vintage), the estate was formerly known as Château Cadet before the Mitjavile family acquired it and gave it their trademark focus on precision and terroir expression. The 20-hectare vineyard is planted 95% Merlot and 5% Cabernet Franc on clay-limestone soils that mirror the finest plots of neighboring Saint-Émilion. Vinification takes place in traditional concrete vats, and the wine is aged in approximately 80% new French oak barrels, producing around 7,500 cases per vintage. L'Aurage is widely regarded as one of the most compelling discoveries in Castillon — offering Saint-Émilion Grand Cru levels of concentration, velvety texture, and finesse at a fraction of the price. Critics including Jeb Dunnuck have awarded scores in the 92–95-point range across multiple vintages. It is the third estate in the Mitjavile portfolio alongside Tertre Roteboeuf and Roc des Cambes (Côtes de Bourg).

LOW BROW CRAFT is an independent, farmer-driven natural winery established in October 2022 by Manabu Akagi in Yoichi, Hokkaido. The name draws inspiration from the Lowbrow Art movement—a 1960s American street art tradition that democratized art for everyday people over elites. After relocating to Hokkaido in 2014 and training for three years under Takahiko Soga at Domaine Takahiko, Akagi set out to make genuinely approachable natural wines rooted in the land. Operating from a beautifully renovated stone storehouse that once stored apples with natural snow cooling, the winery practices organic viticulture with no synthetic pesticides, wild yeast fermentation, and minimal sulfur additions. La Belle Vigne is a small husband-and-wife winery founded in 2019 on the banks of the Hikawa River in Katsunuma, Koshu City, Yamanashi Prefecture. The name is French for 'beautiful vine,' reflecting the founders' philosophy of creating wines in harmony with nature. Winemaker Daisuke Gotoh trained at the University of Bordeaux and served as head sommelier at a Michelin-starred French restaurant in Ginza, Tokyo, before realising his dream of becoming a vigneron. Lan Seqqua is a micro-domaine winery in the Koyachi district of Yoichi, Hokkaido, founded by Juntaro Yamakawa and Ryuko Haru. Grape cultivation began in 2018 on a 1.6-hectare sloped site, with the first estate vintage (KOYACHI and pon nitay) released in spring 2023. The name combines 'Lan' — the Japanese sound of joy (ランランラン♪) — and 'Seqqua', a neologism from 雪華 (snow crystal), meaning 'joyful snow.' This reflects Yoichi's 2-meter winter snowfall, which insulates vines from extreme cold — an embrace of the land's challenges rather than a lament. Yamakawa trained for two years under Domaine Takahiko's Takahiko Soga before establishing the domaine.
