pur. is a small-batch winery on the highest plateau in Niki-cho, Yoichi District, Hokkaido, sitting at 130–150 m elevation with sweeping views of Shiripa Cape. Owner Tanyama Tokichi took over the 3-hectare family vineyard in 2021 and released the first vintage in 2023 through commissioned winemaking at Yamada-do, whose winemaker trained at the legendary Domaine Takahiko. The name — French for 'pure' — captures the winemaking philosophy: harvest quality grapes, press them as-is, add nothing. Eight varieties including Chardonnay (45%) and Pinot Noir (35%) grow in clay-rich, north-facing plots at the highest point in Niki-cho, demanding meticulous canopy management. Production is tiny and sold primarily through local channels and the Yoichi furusato nōzei program.

Champagne Éric Taillet is a family récoltant-manipulant estate in Baslieux-sous-Châtillon, in the western Vallée de la Marne. The house was founded in 1956 by Daniel Taillet and released its first bottles in 1961; Éric, the fourth generation, took over in 1995 and now works alongside his children Dylan and Léna. Roughly 6 hectares are planted mostly to Meunier, with some Chardonnay, Pinot Noir and rare varieties such as Pinot Gris, Petit Meslier and Arbane. Recognised as a Meunier specialist, the estate treats the grape as the centre of its work rather than a blending supporting role, with a minimal-intervention approach and HVE and VDC sustainability certifications.

Ökonomierat Rebholz is a historic VDP estate in Siebeldingen, in the Südliche Weinstraße area of the Pfalz. Led by Hansjörg and Birgit Rebholz, with sons Hans and Valentin representing the next generation, the family has farmed the same site for generations and turned it into one of Germany's leading addresses for bone-dry Riesling. A member of the VDP since 1991, the estate practices biodynamic viticulture (certified organic since 2005, biodynamic since 2006) and rejects chaptalization and acidification, letting fruit ripen fully on sandstone and Rotliegend soils. Wines from top sites such as Kastanienbusch, Im Sonnenschein and Mandelberg define the clear, precise 'Rebholz style' that has become a benchmark for dry Riesling from the southern Pfalz.
