The sparkling counterpart to Yamato Budoshu's still Tsugai, made from 100% Koshu grapes grown in mineral-rich vineyards around Katsunuma, Yamanashi. Produced using the Élevage sur lies method, in which the wine matures on its lees so that amino acids and peptides are absorbed into the wine, giving it a dry, mineral-driven character with refreshing citrus brightness. The name 'Tsugai' means 'pair' — symbolizing the harmony between nature and human wisdom, and between grape growers and winemakers.
The sparkling twin of Tsugai — Élevage sur lies coaxes out a mineral depth that makes this one of Katsunuma's most distinctive Koshu sparklers.
