Tokito Yama Sauvignon is a dry red wine made from 100% Yama Sauvignon, a Japanese hybrid grape crossing native wild yamabudo vines with Cabernet Sauvignon, grown on Winery Konohana's own vineyard in Kosaka, Akita. Fermented and aged entirely in stainless steel tanks with no oak, it shows a deep, vivid purple color and a bold, wild character built on the yamabudo parent's bright acidity and the Cabernet Sauvignon parent's fuller body and soft tannin. Bottled unfiltered ('muroka-namazume') directly from the tank, it carries a more concentrated aroma and flavor than a filtered wine and continues to evolve with a few years of bottle age.

Best enjoyed 2-3 years after the vintage; serve at cool room temperature (around 15°C).
