TSUKUBA PRIMO SPARKLING is Tsukuba Winery's midwinter nouveau-style red sparkling wine, made from 100% Fuji no Yume — a Japanese hybrid cross of Riesling and wild mountain grape (yamabudo) grown on the granite-derived soils at the foot of Mount Tsukuba in Ibaraki Prefecture. It is part of the winery's "Primo" series of unfiltered, early-release wines made each year from that season's freshly harvested grapes and sold exclusively at the winery itself (no online sales, no advance reservations), timed for the Christmas and New Year season. Bottled unfiltered in a strictly limited run of roughly 500 bottles (720ml) per vintage, it shows a vivid, festive color with moderate acidity balanced by the natural richness of Fuji no Yume. It is a distinct release from Tsukuba Winery's méthode traditionnelle sparkling wines (SPARKLING BLANC, SPARKLING ROSE, SPARKLING Muscat Bailey A), which age on the lees in bottle for about a year; PRIMO SPARKLING instead showcases the immediate, vibrant fruit character of the season's harvest as a true nouveau.
Skip the usual white sparkler this Christmas — Primo Sparkling's red-hued fizz and Fuji no Yume richness make it the boldest way to toast the season, if you can grab one of the roughly 500 bottles made.
