Yuino Rosato is St. Cousair's Italian-inspired dry rosé, made from Nagano-grown grapes and vinified at the winery's home in Iizuna, Nagano. Named for the Italian word for rosé, 'rosato,' it is a bronze medalist at the 2010 Challenge International du Vin in France for its 2009 vintage. The blend is led by Merlot (around 84%) with Sangiovese (around 11%) and a small addition of Cabernet Sauvignon (around 5%), giving the wine a vivid ruby color that stands out among Japan's typically pale-hued rosés. Unlike St. Cousair's lightly sweet rosé blend, Rabbit Eye, Yuino Rosato is vinified in a dry style, balancing ripe red-berry fruit and freshness with moderate, well-integrated tannins that give it a food-friendly structure closer to a light red than a delicate blush.
