02 Rosé is SIX THREE ESTATE WINERY's single-varietal Cabernet Sauvignon vinified in a rosé style, made from 100% Cabernet Sauvignon sourced from vineyards in Fukui and Hyogo prefectures by winemaker Tsuneki Nishino. The wine undergoes natural wild-yeast fermentation with no additives and no filtration, and is aged in French oak. It pours a clear, pale garnet color — unusually light for a Cabernet Sauvignon — with lime and citrus aromas that open into a palate of ripe strawberry sweetness, its fruit and acidity outweighing any tannic grip. The producer describes it as a soft, nostalgic wine, reminiscent of a first love.
Proof that Cabernet Sauvignon doesn't have to mean big and tannic — this rosé trades structure for pure, strawberry-bright charm.
