A traditional-method (bottle-fermented) sparkling wine from Seven Cedars Winery, made entirely from Delaware grown in Katsunuma, Koshu City, Yamanashi — 96% from grower Kazuhito Osawa and 4% from 7c's own vineyard, tended by Makoto Uchida. The 2024 vintage was harvested August 13-26, 2024, and the base wine was fermented with no added sugar before undergoing a five-week secondary fermentation in bottle. It is disgorged at zero dosage, with no sugar added after fermentation, then aged five months in bottle before release; only 3,571 bottles were produced. The result is a dry sparkling wine with apple and pineapple-candy aromas that mix mature and fresh nuances, crisp acidity, and a subtle bitterness from the secondary fermentation that widens its range of food pairings.
