A regional-blend Sauvignon Blanc from Kaminoyama at the foot of Mt. Zao in Yamagata Prefecture, one of Japan's premier wine-grape growing areas thanks to its well-drained soil, long hours of sunshine and wide diurnal temperature swings. Made entirely from hand-harvested Sauvignon Blanc sourced across the Kaminoyama district (not a single-vineyard bottling), the grapes undergo skin contact before fermenting slowly at low temperature with a selected yeast strain; free-run and lightly pressed juice are then blended for balance. The wine shows a clear pale yellow color with aromas of grapefruit and lemon layered with a subtle herbal note, clean bright acidity and a crisp, gentle finish. Released in a limited run of 4,656 bottles, sealed under screw cap.
Kaminoyama's long sunshine and wide diurnal swings give this Sauvignon Blanc a cleaner, gentler citrus profile than its Marlborough cousins — an everyday white that never overstays its welcome.
