Ice Sweet Niagara is an ultra-sweet dessert wine from Oura Budoshu in Akayu, Nanyo City, Yamagata. The winery freezes already-frosted Niagara grape juice a second time to concentrate it to 36 degrees Brix before fermenting it, producing a wine that intensifies Niagara's signature aromatic sweetness. It won silver at the Japan Wine Competition 2025 and gold at the Sakura Wine Award 2026.
A double freeze-concentration technique most Japanese producers don't bother with — the payoff is a Niagara so intensely aromatic and honeyed it drinks like liquid dessert.
