Okutoya Winery's premium 'Tatsuka' line Chardonnay, made from 100% Chardonnay grapes sourced from the Tatsuka district of Sobetsu, Hokkaido, overlooking Lake Toya. After a 24-hour low-temperature skin contact, the must is fermented in stainless steel tanks, then transferred to oak barrels for malolactic fermentation before returning to stainless steel for several months of aging. The result is a pale yellow, dry, elegant white with fresh lemon and pear aromas, subtle herbal nuance, fine-grained acidity, and a lingering finish.
