Hand-harvested grapes are oxidatively whole-bunch pressed. Fermentation occurs with indigenous yeasts in 500L French oak barrels (3rd to 5th fill) and 2000L Foudre. The wine undergoes natural malolactic fermentation and is aged on its lees for approximately 11 months before bottling.
