Mizukake Blanc is the flagship white cuvée from Mizukake Brewery, a micro-winery on the Mizukake ridge above 1,000 meters in Hara Village, Nagano, at the foot of the Yatsugatake mountains. Each vintage blends estate-grown Alsace-style varieties — typically Riesling, Sylvaner, and Pinot Gris, with Sauvignon Blanc or Gewürztraminer added in some years — fermented with a mix of wild and cultivated yeast in large old oak barrels, then rested on light lees in stainless steel for several months before bottling.
