DELAWARE SPARKLING is a dry white sparkling wine from Minamisanriku Winery, made entirely from Delaware grapes grown in the Honzawa district of Yamagata City, Yamagata Prefecture. Two lots — one picked early and one left to fully ripen — are fermented separately and blended, then given a traditional-method (méthode traditionnelle) secondary fermentation in the bottle to lock in gentle bubbles and umami depth. It shows a bright lemon-yellow color with fresh green apple and lime aromas over a plump, layered fruit character, finishing crisp and clean. First launched in 2017 as the winery's very first commercial product, it remains one of Minamisanriku Winery's signature bottlings; individual vintages sell out and rotate seasonally.
