Kyoho is Les Vins Vivants' oak-fermented rosé made primarily from purchased Kyoho table grapes sourced from local growers around Tomi City, Nagano Prefecture, blended with small amounts of other locally grown table grapes including Merlot, Nagano Purple, Queen Nina, and Pione. The grapes are fermented with indigenous wild yeast through semi-carbonic maceration in a mix of open stainless steel and closed plastic tanks, then fermentation and aging continue in barrel without topping up (non ouillage). No sugar or acid is added and no sulfites are used at any stage, and the wine is bottled unfiltered and unfined. Kyoho's naturally deep-colored, aromatic skin gives the wine its rosé hue and a soft, juicy character, while the barrel work adds a gentle textural depth atypical of a simple table-grape wine.
