Kamonone Kyoho Sparkling is a sweet sparkling wine from Kumamoto Wine Farm's Kikuka Winery in Yamaga City, Kumamoto Prefecture, part of 'Kamonone' (literally 'the sound of fermentation'), a winery-and-online-shop-exclusive series named for the sound of bubbles bursting during fermentation. Made from 100% Kumamoto-grown Kyoho — a large, deeply colored table-and-wine grape beloved across Japan — this cuvée is produced by a rare cryoextraction method: freshly harvested grapes (picked late August to mid-September) are flash-frozen whole in their clusters, then left to thaw slowly from mid-November onward. As the grapes thaw, only the richest, most concentrated juice is pressed off first while the water content remains frozen, yielding an unusually deep, sweet must. This luxurious Kyoho juice is fermented at a controlled low temperature of 10-15°C entirely in stainless steel tanks, with alcoholic fermentation deliberately halted while substantial residual sugar remains, then filtered to remove the yeast and carbonated by gas injection before bottling — a process designed to approximate the depth of a traditionally bottle-fermented sparkling wine. The result is a beautifully pink-hued, low-alcohol (8%) sweet sparkler bursting with authentic Kyoho grape aroma, honeyed apple and pineapple-like sweetness, and concentrated fruit richness, making it an approachable choice even for those who don't usually drink wine.
