Creative Series Delaware Barrel Fermented is an online-store-exclusive dry white wine from Kumamoto Wine Farm (Kikuka Winery) in Yamaga City, Kumamoto Prefecture, made from 100% Delaware, an American hybrid grape variety widely grown across Japan. It is the flagship bottling of the winery's 'Creative' series, an experimental online-only line launched to explore new sensibilities beyond the winery's signature Chardonnay-driven Kikuka series, developed with direct feedback from drinkers over time. The wine undergoes skin contact to draw out aromatic compounds without damaging delicacy, followed by barrel fermentation that adds richness, toasty depth, and roundness while keeping the fruit character forward. The result is an elegant, food-friendly dry white with juicy white peach, pear, and white flower aromas, a cotton-candy-like sweet nose, bright acidity, and concentrated fruit richness on the palate, designed to pair naturally with Japanese cuisine. The label artwork reflects winemaker Daisuke Ikebe's creative vision and tasting image for the wine, intended to be enjoyed through the changing seasons — from the fresh breezes of spring to a well-chilled glass in early summer.
Proof that Kumamoto Wine Farm's ambitions extend beyond Chardonnay — barrel fermentation gives humble Delaware unexpected depth while preserving its signature perfumed charm.
New to wine?
A friendly entry point for wine beginners: Delaware's naturally fragrant, easy-drinking character is given extra depth by barrel fermentation, without becoming heavy or intimidating.
Food Pairings
The bright acidity and elegant fruit character make this an excellent match for Japanese cuisine — try it with sashimi, tempura, grilled white fish, or delicate dashi-based dishes. The barrel-derived roundness also complements light cream sauces, soft cheeses, and roasted chicken.
When to drink it
Casual dinners with Japanese food, spring and early-summer gatherings, and as a distinctive gift for wine lovers who already know the winery's Chardonnay.
Terroir & Winemaking
100% Delaware grown in Kikuka-cho, Yamaga City, Kumamoto Prefecture. The grapes undergo skin contact prior to pressing to enhance aromatic extraction, followed by fermentation in oak barrels (rather than the stainless-steel-only approach used for the winery's standard Kikuka bottlings). ABV 13%, dry style, 750ml bottle. Part of the winery's online-store-exclusive 'Creative' series.

Frequently Asked Questions
- What grape is Creative Series Delaware Barrel Fermented made from?
- It is made from 100% Delaware, an American hybrid grape variety that is one of the most widely planted table and wine grapes in Japan, known for its fragrant, easy-drinking character.
- How is this wine different from a typical Delaware wine?
