Tomoya's Notebook is a limited release from Kinkei Wine that recreates a recipe recorded roughly thirty years ago in founder Tomoya Sato's own winemaking notebook, using a yeast strain first used in the 1970s. Made from 100% Yamagata-grown Muscat Bailey A grapes harvested by a relative of the current owner, it is fermented and bottled without any added sulfites, and gains a gentle oak nuance from barrel aging — a medium-bodied, dry red that channels three decades of family winemaking history.
