Koshu Blanc de Blancs is Ikeda Winery's entry into sparkling wine, made from 100% Koshu grapes grown around Katsunuma, Koshu City, Yamanashi Prefecture — the same fruit that underpins the winery's still Koshu lineup. Rather than using the traditional method (bottle-fermented) or the Charmat tank method, the wine is produced by carbonating a finished still Koshu base wine, a lighter-touch approach that keeps costs down while preserving the grape's natural citrus and herbal aromatics. Non-vintage and semi-dry, it shows fine, gentle bubbles, balanced acidity, a touch of fruit sweetness, and a pleasant light bitterness typical of Koshu — a distinctly different, effervescent expression from the winery's still whites such as Barrel-Aged Koshu and Grand Cuvée Koshu.
