Jean Merlot is the top cuvée of Horaisan Winery's Merlot lineup in Fuchu, Toyama — a single-varietal Merlot released only in exceptional vintage years after an unusually long period of barrel aging. Unlike the winery's other Merlot bottlings, which are fermented and aged in stainless steel (Tokiwasure) or given oak character via chip maceration in tank (Takenawa), Jean Merlot spends its life in actual oak barrels. The result is a deeply colored, concentrated wine where vanilla and coconut notes from extended barrel aging meet Merlot's ripe fruit without ever overpowering it, mellowed into a smooth, rounded texture. Production is extremely limited — just 572 bottles for the 2019 vintage — and it is sold almost exclusively at the winery's own shop rather than through online retail or wine shops.
This is Horaisan Winery's most ambitious Merlot — genuine long barrel aging gives it a richness that flirts with mature Bordeaux, yet it never loses the unmistakable, food-friendly character of a Toyama wine.
New to wine?
Not a first pour — this is Horaisan's most serious, barrel-driven Merlot, best appreciated after trying the lighter Tokiwasure or Takenawa first.
Food Pairings
Rich enough for French-style meat dishes, but its Toyama roots show in how well it pairs with local specialties like salt-grilled nodoguro (rosy seabass) and kombu-jime cured fish. Also excellent with slow-simmered stews and aged hard cheeses that can stand up to its oak-derived depth.
When to drink it
A special-occasion pour for wine lovers, or a memorable find for anyone visiting the Horaisan Winery shop in Toyama directly.
Terroir & Winemaking
100% Merlot from Horaisan Winery's estate vineyards. Produced only in strong vintage years and aged for an unusually extended period in oak barrels — a real barrel-aging process that distinguishes it from Tokiwasure (stainless steel only, no oak) and Takenawa (oak-chip maceration in tank, not barrel aging) within the same producer's Merlot range. Extremely limited production of around 572 bottles for the 2019 vintage; sold almost exclusively at the winery's own shop.

- How is Jean Merlot different from Horaisan Winery's other Merlot wines, Tokiwasure and Takenawa?
- All three are 100% Merlot, but the winemaking differs: Tokiwasure is fermented and aged entirely in stainless steel for pure fruit character, and Takenawa gets its oak nuance from chips steeped in tank. Jean Merlot is the only one of the three actually aged in oak barrels, and for an unusually long period, making it the top cuvée of the producer's Merlot lineup.
- What does Jean Merlot taste like?
- It shows a very deep, concentrated color with vanilla and coconut notes from extended barrel aging balanced against ripe Merlot fruit. Long aging has softened the edges, leaving a smooth, mellow texture rather than an overtly oaky or tannic wine.
- What food pairs well with Jean Merlot?
- It suits French-style meat dishes as well as Toyama specialties such as salt-grilled nodoguro (rosy seabass) and kombu-jime cured fish, plus slow-simmered stews and aged hard cheeses.
- Where can I buy Jean Merlot?
- Production is extremely limited — only about 572 bottles for the 2019 vintage — and it is sold almost exclusively at Horaisan Winery's own shop in Toyama rather than through online retail or general wine shops, making it something of a hidden specialty for visitors.
