Toyama Prefecture sits on Japan's Sea of Japan coast in the Chubu region, framed by the dramatic contrast between the 3,000-meter peaks of the Tateyama mountain range and the deep waters of Toyama Bay just a short distance away. This is still a small and emerging Japanese wine region, but it has produced some of the country's most talked-about newer wineries, most notably SAYS FARM, which overlooks Toyama Bay from the hills of Himi and has drawn national attention for its Chardonnay and sparkling wines. Domaine Beau
Domaine Beau is a winery operated by Tresbeau Corporation on the Tatenohara plateau in Nanto City, Toyama Prefecture. Founded in November 2017 by Yasuji Nakayama, a longtime sake and wine retailer from Takaoka, the project set out to transform abandoned farmland into a wine estate that could become a 'Japanese Cote d'Or.' Grape planting began in 2018 and the first wines were released in 2020. Winemaker Kazuya Matsukura, who trained in sake brewing at Marufuji Budoshu Kogyo in Yamanashi, applies low-temperature, long fermentation techniques to craft clean, pure, and elegant wines from 14 European grape varieties, grown with IoT-assisted, reduced-pesticide viticulture. The winery's Aroma Chardonnay from Takayama Village 2022 won gold at the Japan Wine Competition 2023, and Domaine Beau was recognized in the Japan Winery Award 2025.

Horaisan Winery
Founded in 1927 when grapevines were first planted in the Fuchu district of Toyama City, Horaisan Winery is the oldest continuously operating winery in the Hokuriku region, having held a wine brewing license since 1933 under the name "Horaisan Budoshu." Now led by fourth-generation president Tomoko Yamafuji, the family-run estate farms roughly a century of vineyards planted to Muscat Bailey A, Merlot, Cabernet Franc (including vines over 40 years old), and Sauvignon Blanc, alongside table grapes. SAYS FARM
SAYS FARM is an estate winery and restaurant perched on a small hill in Himi, Toyama Prefecture, overlooking Toyama Bay and the Tateyama mountain range. Founded in 2007 by Seiji Tsuri, brother of the head of the historic Himi fish wholesaler Tsuriya, the project began as an effort to reclaim over 20 years of abandoned farmland and create a wine that could be enjoyed alongside Himi's famed seafood. Seiji passed away before the winery's completion in 2011, but his staff carried his vision forward. Winemaker Shun Tamukai crafts wines exclusively from Himi-grown grapes — Chardonnay, Sauvignon Blanc, Cabernet Sauvignon, Merlot, Pinot Noir, and, since 2012, Albariño, a variety well suited to the region's humid, coastal climate. Rosé accounts for roughly 30% of production, reflecting the winery's focus on wines that complement local fish. SAYS FARM's Ojiko Chardonnay won gold in the European Varieties White Wine category at the 2017 Japan Wine Competition. The estate also includes a restaurant, shop, gallery, and guesthouse, making it a full destination for wine, food, and coastal scenery.
