EMODELA is Hitomi Winery's playful orange wine — a skin-contact white made from 100% Delaware grapes grown in Yamagata Prefecture. Fermented as whole clusters and left in extended contact with the skins, the wine takes on a warm, tangerine-tinted hue and the savory depth typical of orange winemaking. Guided by the winery's 'making friends with oxygen' philosophy, EMODELA embraces gentle, controlled oxidation rather than avoiding it, resulting in a soft-textured, medium-bodied dry wine with a layered, evolving aroma. Unfiltered and unfined in Hitomi's signature nigori style, and bottled without added sulfites, it evokes the cozy, nostalgic feeling of peeling a mandarin orange under a kotatsu — a quintessential 'yuru-uma' (relaxed and delicious) wine.
EMODELA proves that Delaware — Japan's everyday table grape — can be coaxed into a genuinely sophisticated orange wine. Its nostalgic, tangerine-like warmth makes it one of Hitomi Winery's most instantly endearing cuvées.

Food Pairings
Its gentle tannin grip and umami-laced acidity make EMODELA a natural match for Japanese home cooking — think grilled saba, simmered root vegetables, or tofu and yuba dishes with a splash of soy. It also pairs well with soft, washed-rind cheeses and citrus-dressed salads.
When to drink it
Casual dinners with friends, a relaxed evening at home, or anywhere you want a conversation-starting natural wine.
Terroir & Winemaking
Made from 100% Delaware grapes grown in Yamagata Prefecture. Whole-cluster maceration extracts color and phenolics from the skins, producing a classic orange-wine profile (an amber-tinted white, not a rosé). Fermented with ambient yeast, the wine is left unfiltered and unfined and bottled without added sulfites, in keeping with Hitomi Winery's nigori tradition. ABV 11%, 750ml bottle.
