BUBBLY TENDER cuvee STEUBEN is a lightly sparkling dry rosé from Hitomi Winery, made from 100% Steuben grapes grown in Yamagata Prefecture. The fully ripened grapes are fermented via carbonic maceration for about three weeks before pressing, then bottled to undergo a natural secondary fermentation driven by wild yeast in the traditional rustic ('inaka-shiki') pét-nat style. Unfiltered and bottled without added sulfites in keeping with Hitomi's house 'nigori' philosophy, it shows a fresh, floral bouquet and gentle, fine bubbles. It is a sister bottling to the winery's BUBBLY TENDER BLANC (a Delaware/Steuben/Niagara field blend), sharing the same playful 'Bubbly Tender' house style but expressed as a single-variety Steuben rosé rather than BLANC's white, multi-varietal blend.
