Spätburgunder — German for Pinot Noir — is Fermier's expression of the German clone of Pinot Noir, planted as part of the winery's Pinot Noir project launched in 2013 alongside Burgundy-derived Dijon clones. Grown in the coastal sand-dune terroir of Kakuda-hama, Niigata, where the Shinano River meets the Sea of Japan, the hand-destemmed grapes undergo a five-day cold maceration in open-top stainless steel tanks before aging roughly 17 months in old French oak barrels. Compared to Fermier's Dijon-clone Pinot Noir bottlings, the Spätburgunder clone yields larger berries and a paler color, producing a gentler, more elegant, medium-bodied red with earthy, umami-rich depth.
