Ebeotsu Wein is a small family-run winery in the Ebeotsu district of Takikawa City, Hokkaido — the first winery to be established in the Chuo-Sorachi (central Sorachi) area. Founder Kosuke Takahashi moved from Tokyo to Hokkaido in the late 2000s, began preparing the vineyard soil in 2015, and planted his first vines in 2016. After years of grape-growing, the family began fermenting their fruit on a custom-crush basis at 10R Winery in nearby Iwamizawa from 2018, and the winery itself was formally established in 2023. Today Takahashi, his wife, and their son work the vineyard and cellar together, cultivating five varieties — Pinot Noir, Pinot Gris, Pinot Blanc, Müller-Thurgau, and Zweigelt — and fermenting with wild yeasts and indigenous lactic acid bacteria at low temperatures to preserve aroma and freshness. Ebeotsu Wein is a full member of the Sorachi Wine Association.
