Haskap Sparkling is Chitose Winery's flagship fruit sparkling wine, made from haskap berries grown around Chitose City, Hokkaido. Unlike the winery's still haskap wines, it is produced using the traditional method (bottle-fermented secondary fermentation), yielding a dry rosé-style sparkling wine with a beautiful hue and a creamy, fine mousse on the palate. Bottled at 750ml and 12.5% ABV, it was originally released as a limited-batch bottling in early summer 2019.
A rare example of a bottle-fermented sparkling wine made entirely from haskap — its dry profile and fine mousse set it apart from typical sweet Japanese fruit wines.
