K la selezione privata is Casa Watanabe's premium selection Koshu cuvée ("selezione privata" is Italian for "private selection"), made from 100% Koshu grapes grown in Katsunuma, Koshu City, Yamanashi with minimal agrochemical use. Fully ripened fruit is fermented slowly at low temperature to concentrate the grape's natural character into a richly flavored, food-friendly white. It is dry with restrained acidity and a light-to-medium body; the 2024 vintage shows a fuller, riper profile than the 2022 release, with somewhat lower acidity, and pairs particularly well with butter-sauced dishes. ABV 11.5%, bottled in 720ml. Decanting or letting the wine breathe after opening is recommended to open up its aromatics.
