Named after the winery's founder, Omar Sanino, this is Casa Baricalino's sparkling wine, made from a Chardonnay and Sauvignon Blanc blend using the Metodo Martinotti (Charmat method). The base wine is fermented in temperature-controlled stainless steel before a second fermentation on fine lees in an autoclave for around six months, producing fine, persistent bubbles, a straw-yellow color, and a fresh, delicately yeasty, well-balanced palate.
