Chardonnay

About this wine

Colección 125 Chardonnay is Chivite's flagship white and one of Spain's benchmark barrel-fermented Chardonnays. First released in 1993, it is fermented with the best free-run must in 225-litre French oak barrels and aged on its lees for about a year, giving it exceptional depth, complexity, and long-term ageing potential rare among Spanish whites.

Beginner's Note

A rich, oak-aged white that shows what Spanish Chardonnay can achieve at its best — serve slightly chilled, not ice-cold.

Sommelier's Note

"One of the very few Spanish whites built for the cellar rather than the fridge — Colección 125 Chardonnay ages as gracefully as a top white Burgundy."

Food Pairings

Pairs beautifully with roasted white fish, lobster in butter sauce, creamy risottos, and aged sheep's milk cheeses such as Manchego.

When to drink it

Special dinners, seafood feasts, and moments calling for an ambitious white wine.
