About this wine
Billecart-Salmon Blanc de Blancs is a luminous expression of 100% Chardonnay sourced from Grand Cru villages of the Côte des Blancs — Avize, Chouilly, Cramant, and Le Mesnil-sur-Oger. A blend of two harvests, it is unified through the house's signature cold fermentation and aged on the lees for four to five years before disgorgement. The resulting wine is pale gold with fine, persistent bubbles and offers an exquisite aromatic palette of crisp green apple, citrus zest, white flowers, toasted brioche, and chalky minerality. On the palate, vibrant acidity interweaves with a creamy mousse and an elegant, saline-mineral finish that defines Billecart-Salmon's hallmark finesse. Dosage is kept exceptionally low (around 1.7 g/L) to let the pure Chardonnay character speak for itself.
The ultimate gateway to luxury Champagne — crisp, mineral, and endlessly refreshing
Sommelier's Note
"Among Blanc de Blancs at this price point, Billecart-Salmon's version is unmatched for purity — taste it once and you will understand why this house has survived 200 years on elegance alone."
Food Pairings
A natural companion for fresh oysters on the half shell, caviar, and seafood carpaccio. Its razor-sharp acidity and chalky minerality elevate grilled sea bass, Dover sole meunière, scallops in butter sauce, and lemon-dressed crab. Works beautifully with light goat cheese and delicate vegetable dishes.
