Bibbiano

Sangiovese

About this wine

Bibbiano's entry-level Chianti Classico is a 100% Sangiovese blend from vineyards on both sides of the estate (Vigna del Capannino and Vigne di Montornello), a deliberate choice that goes beyond the DOCG's allowance for up to 20% other varieties — a nod to the purist philosophy instilled by the legendary consultant winemaker Giulio Gambelli. Grapes are hand-harvested, fermented in stainless steel for around 16 days, then aged roughly 11-12 months in glass-lined cement vats (with malolactic fermentation also taking place in cement) before 4-6 months of bottle aging. The result is a deep ruby red wine with purple reflections, aromas of violet, rose and orange peel, and a palate of redcurrant, cherry and baked plum framed by chalky, crunchy acidity.
