Founded in 2001 by Shuji Tamura, Bankei Toge Winery is recognized as the first winery established in Sapporo, Hokkaido. Tucked into the wooded Bankei valley in Chuo-ku, just a 15-minute drive from central Sapporo, this small, hands-on estate crafts wine, cider and fruit wines from Hokkaido-grown grapes and other fruit, combining its own hillside vineyard with fruit sourced from producers around the prefecture, including Niki and Sobetsu. The winery is committed to additive-free winemaking: sulfite-free, free-run juice fermented with wild yeast, with grapes hand-sorted cluster by cluster and any fruit that has touched the ground excluded to avoid oxidation. Alongside wine, the estate also produces cider, fruit wines from haskap and raspberry, artisan bread made with Hokkaido wheat, and handmade cheese. It doubles as a community gathering place, with weekend tastings and a seasonal terrace where visitors can sample wine overlooking the vineyard.
