Frozen Delaware Sweet is a small-batch dessert wine from Asahimachi Wine (Asahi Town, Yamagata Prefecture), made by freezing fully ripe, locally grown Delaware grapes whole on the cluster and then pressing them while still frozen. The resulting juice is fermented slowly at low temperature, concentrating Delaware's natural sugar and acidity into an intensely sweet, aromatic white wine. Sold in a 720ml bottle, it is distributed only within Yamagata Prefecture, making it one of the winery's rarer, more distinctive bottlings alongside its everyday Red, Rosé and White wines.

Sommelier's Note

A genuinely rare find — this frozen-pressed Delaware is sold only in Yamagata Prefecture, so most wine lovers outside the region will never get to taste it.

New to wine?

A rare, easy way to try Japanese-style ice wine: its candy-like sweetness makes it an approachable first dessert wine.

Food Pairings

Its concentrated sweetness and bright acidity pair well with blue cheese, foie gras, and fruit-based desserts, and also work nicely alongside Japanese wagashi such as yokan or anko-based sweets, and even salty rice crackers for a sweet-and-salty contrast.

When to drink it

Best enjoyed chilled as an after-dinner dessert wine, or as a special, hard-to-find gift for sweet wine lovers.

Terroir & Winemaking

Made entirely from Yamagata-grown Delaware grapes. Whole clusters are frozen after full ripening, then pressed while still frozen (a cryo-extraction / 'ice wine' style method) to concentrate sugar and acid in the free-run juice. Fermentation proceeds slowly at low temperature to preserve Delaware's delicate aromatics. Bottled at 720ml; sold only within Yamagata Prefecture. Precise ABV is not disclosed in publicly available sources as of this writing.

Frequently Asked Questions

What does Frozen Delaware Sweet taste like?
It is an intensely sweet white wine with concentrated Delaware grape and honeyed fruit character, balanced by the variety's naturally bright acidity.
How is this wine made?
Fully ripe Delaware grapes are frozen whole on the cluster and pressed while still frozen, concentrating sugar and acid before a slow, low-temperature fermentation — a technique similar to how ice wine is made.
Where can I buy it?
Asahimachi Wine distributes this bottling only within Yamagata Prefecture, including through its own Wine Castle shop, which makes it harder to find than the winery's Red, White and Rosé.
