An experimental 'marine wine' born in 2018 with researchers from the University of Milan and University of Pisa, recreating the ancient winemaking method of Chios described by classical sources. Ansonica grapes are submerged in wicker baskets in the sea off Elba for about five days to remove their bloom, then sun-dried, fermented, and left on the skins in terracotta amphorae for six months. The result is a deep golden, almost opalescent wine with intense notes of iodine, brine, algae, oyster, tropical fruit, almond, chamomile, beeswax and Mediterranean scrub.
Not a typical first wine — an experimental, oxidative style best explored once you enjoy amphora and orange wines.
