Agricola Ottomani was founded in 2006 by four friends who met while studying oenology at the University of Florence. The name 'Ottomani' — meaning 'eight hands' — reflects their collaborative approach, which began with a small rented vineyard and winemaking in a garage. Today the estate farms roughly 15 hectares between the villages of Greve in Chianti and Impruneta, following organic and biodynamic methods and championing indigenous Tuscan varieties such as Sangiovese and Canaiolo. The team has recovered historic vineyards over fifty years old and works with minimal intervention: manual harvest, spontaneous fermentation with native yeasts, and aging in concrete vats or in terracotta amphorae hand-thrown by local Impruneta artisans, a tradition dating back to Roman times. In 2018 they completed a new eco-sustainable cellar with a low environmental footprint. Alongside their Chianti Classico, Chianti Superiore, and amphora-aged wines, Ottomani also produces organic extra virgin olive oil. The estate is a member of the Viticoltori di Greve in Chianti producer association.
